Orange Ginger Coconut Shrimp

Ingredients (2 servings)
- 1 lb large fresh shrimp (peeled & deveined, tail on) *
- ¾ cup all purpose flour
- 2/3 cup beer
- 1 egg
- 1 ½ tsp baking powder
- 2 cups grated coconut (unsweetened)
- 4 tbsp of Asian Menu™ Orange Ginger Sauce
- 3 cups oil
* Pre-breaded coconut shrimp can also be used. You can substitute shrimp with scallops, fish sticks or chicken tenders.

Instructions (25 minutes)
- Remove shell and de-vein shrimp.
- Make batter by mixing ½ cup flour, beer, egg and baking powder.
- Dredge shrimp in ¼ cup flour.
- Dip shrimp in batter.
- Roll shrimp in grated coconut.
- Heat oil in fryer over high heat until hot (approx. 350°F).
- Deep fry shrimp until fully cooked and golden brown.
- Serve shrimp with Asian Menu™ Orange Ginger Sauce at room temperature.
